Peppermint Patties

Peppermint and chocolate are my favorite combination. The cool, smooth taste of the mint and the rich, dark flavor of the chocolate are perfect together. This is a super easy and yummy recipe for the holidays! (Or just for yourself, I won't tell on you.) You would never guess these have no dairy! They are super fluffy and satisfying. :)


 

Ingredients-
1/2 cup coconut oil
1/4 to 1/2 cup powdered sugar
1 teaspoon peppermint extract (to taste)
1 cup dairy free chocolate chips (I used Kirkland semi sweet chips)

In a bowl, mix the coconut oil up until most of the lumps are gone. Slowly add powdered sugar and peppermint extract. (You may need to pop the mixture in the fridge for a few minutes to harden up a bit.) You will want to be able to form it into a ball.

Once you have reached this point, you will want to form the mixture into disks. Place the patties on a waxed paper covered cookie sheet. Then pop them in the freezer to harden. When these are in the freezer, melt the chocolate chips. Dip the patties in the melted chocolate. You may need to add a little coconut oil to the chocolate to make it easier to dip. Put the patties back on the cookie sheet and put in the fridge until the chocolate hardens.

One batch made about 11 patties, but you may have more or less depending on how big you make the patties.

Vegan Nacho Cheese

Oh nacho cheese. How I love you. The stuff from the can? Oh yeah. I could live off of that. 
This recipe might be even better than that. Might be. Ok, it is. This recipe is way healthier, is vegan, has no wheat or gluten, and has no nuts! Yay for people with nut, wheat, and dairy allergies! 

I originally got this recipe from Vegan Yumminess and I tweaked it to my tastes. You should definitely go to her website for far superior pictures and a super cute baby. :) She said she used it to make quesadillas and grilled cheese! I will have to try that! This recipe make a lot of sauce, so you can use it for many different things.

Ingredients-
2 cups chopped and boiled potatoes (I left the skin on mine)
1 cup chopped and boiled carrots (about two large carrots)
1/2 cup nutritional yeast
1/4 cup oil
1/3 cup water
3 tablespoons lemon juice
2 teaspoons salt
1 teaspoon ground mustard

Add everything to your blender and blend until smooth. You can leave the recipe like this, or you can spice it up a bit! I added soy sauce, onion powder, and chili powder. If you are planning to eat this with corn chips, you should taste it with the chips to make sure you don't over salt it.

This sauce has the consistency of real fake cheese sauce! :) It is super velvety and smooth.

Gluten-Free and Vegan Mac and Cheese


Even before I was vegan, I was never a big meat eater. But there is one animal product that I had a soft spot for - cheese! It was my favorite! Ooey, gooey, cheese! I used to add it to everything. But me and dairy don't really get along that well. Since I went vegan, I have been searching for the perfect cheese sauce recipe. I think I found it! This recipe is very low in fat and is super filling and nutritious! 

Ingredients-
1 can white kidney (cannellini) beans
1 to 2 tablespoons nutritional yeast
a few baby carrots
1 tablespoon lemon juice
lemon pepper
garlic powder
rice milk (add as needed)
salt (to taste)
gluten-free noodles of your choice (I used Heartland Gluten Free Fusilli)


First, you will want to cook your noodles according to the instructions on the package. While the noodles are cooking, add everything to the blender. Blend until smooth. (This part is very important) Drain your pasta and pour sauce over it.


 
Serve! This recipe is super delicious and nutritious. Hope you enjoy! :)

Vegan Iced Coffee


This iced coffee is so good! It has no dairy and no added sugar! It's super simple and fast. 

Ingredients- 
Coffee (I used about 2/3 cup) 
Vegan milk of your choice 
Soaked dates (to taste) 
Vanilla 
Ice 


Add everything to the blender. Add dates according to how sweet you want this to be. Add ice according to how thick you want this to be.

Easy and Healthy Vegan Ice Cream

This recipe is one of my favorites! It's super easy and versatile. You can flavor it however you want. I made mine vanilla, but you can add peppermint extract and vegan chocolate chips to make a really great mint chocolate chip ice cream! It also makes a amazing chocolate ice cream. :)

Ingredients- 
2 frozen bananas
5 soaked dates 
Vanilla 
Vegan milk of your choice 

Add everything to the blender. 
Blend until smooth. Mine got a little melty, so I popped it in the freezer and stirred it every so often. Once it reaches the desired consistency, scoop the ice cream out and serve! This recipe is very low in fat and has no refined sugar. And most importantly, it tastes amazing! 

I topped mine with chopped dates. You can add whatever you want.
